Pumpkin Pie Soup

1 pkg cubed butternut squash from costco
3 tablespoons butter
1/4 cup chopped sweet onion
1 quart chicken broth
1/3 cup packed brown sugar
4 oz. cream cheese (fat free works great)
1/2 teaspoon ground black pepper
ground cinnamon to taste
dash of salt

1. Boil butternut squash in a large pot of water until tender, drain.
2. Melt butter in a skillet over medium heat, and saute the onion until tender.
3. In a blender (or with the wand blender I will someday buy) blend the squash pulp, onion, broth, brown sugar, cream cheese, pepper, and cinnamon until smooth.
4. Transfer the soup to a pot over medium heat, and cook, stirring occasionally, until heated through. Serve warm.

Everybody loved this soup! It is super creamy and super sweet! Jaxon ate all the leftovers cold!
I will be making this many more times.......

Can People Change?

Yes, if I could pick anyone to be it would be her! She has some moves!
I went to this huge zumba workout with about 1,000 women. The dude in the hat was the teacher, let me tell you these picture do not do him justice! He lives in LA and is the one of the famous zumba leader. SO in the workout he was blow away by the moves these ladies had! He ditched his size two workout ladies behind him and had these ladies come up on stage and dance with him! I don't think I have ever had so much fun working out! But I want to be them!


My new thing is, "People don't change". After reuniting with most of my High School, and childhood friends. I would definitely have to say everyone is the same now as they were back then! I do think it is so hard to change that unless you go to major rehab for what ever you want to change, we stay the same! So what does that mean? Well you kinda get what you get! If you married a great guy, then you are still married to a great guy! If you are like me and want to change things about your self (like don't get so busy, don't gossip, loose 10 pounds, etc) I am not going to change if I don't keep trying every day! And I don't know if I will ever not struggle with the things I want to change!


This zumba thing has been so much fun for me! I would have to say when I looked around the room and was in the middle of a bunch of want a be Jazz dancer, I was so out of my comfort zone! Now I will never be a Jazz dancer, but I have a blast making a fool out of my self!

No More Christmas Salad!

Well, my computer had 117 viruses......I am glad it is feeling much better! The only problem is when you computer is broken for that long you get bored and fill all your blogging and facebook time with other things! I am grateful for good friends that are going to give me free lessons on how to say the word NO............
As for the last few months we have been doing the same old and a few new things! Lucky me.... when Steve in done with the Kitchen (eta......2020) he is going to build a 1,000 square foot gear room. Thanks goodness we bought our kids tons of crap with our money and didn't just loose it all in the stock market!

Josh has found his true love in the sporting world.....Hockey!

He also found some hot chicks to ski with!

Steven finally got some new glasses!


And I found a few minutes to do some crafty things! I hope everyone is still alive and doing well!

Christmas Salad

Christmas Salad (very yummy!!!)
Box of Costco Lettuce
Mozzarella Cheese
Pomegranate
Mandarin Oranges
Toasted Almonds
This salad tasted great!
I made homemade salad dressing (recipe on Stacy's blog). Thanks Stacy, so yummy! I didn't have a red onion so I used a white onion, and it still tasted great! Oh ya, I halved the recipe and it was perfect!
OK- so my big question is do you toss your salad with dressing before you go? If so, what lettuce do you use-I was thinking the good Costco lettuce would just wilt!
And the really big question I have for all of you- If you don't toss the salad and dressing- what kinda cute bottle do you have for homemade salad dressing?
